- Preheat your oven to 350°F(175°C).
- Mix the flour, baking powder, salt, baking soda, and cinnamon in a bowl and set aside.
- Melt the coconut oil and set it aside to allow it to cool.
- Combine pumpkin, milk, maple syrup, and vinegar in a separate bowl.

- 1 chia egg or vegan egg (1 tbsp chia seeds + 3 tbsp water)
- ½ cup of mashed ripe banana

- ¼ cup of shredded zucchini
- ¼ cup of unsweetened almond milk
- ½ cup of oat flour
- ¼ cup of chickpea flour
- ¾ teaspoon of baking powder
- ¼ teaspoon of baking soda
- ¼ teaspoon of ground cinnamon

- ½ cup of plain vegan coconut yogurt
- ¼ cup of unsalted peanut butter
- 2 tbsp of chickpea flour

- Preheat the oven to 350°F(175°C) and queue a cupcake tray with cupcake molds. You can also lightly oil the cupcake tray with coconut oil. Place aside.
- In a large mixing bowl, combine the chia seeds and water to make the chia egg. Set aside for 10 minutes to enable it to thicken.
- Add the mashed banana, peanut butter, zucchini, almond milk, and after the chia seeds have thickened. Mix everything together until it's uniform.
- Now, add other ingredients as instructed and combine them evenly into a cupcake batter.
- Distribute the batter equally into the cupcake molds with a tablespoon-sized cookie scooper, or once they are around 2.5-3 tablespoons each filled. Probably, 8 cupcake molds were filled.
- To eliminate any air bubbles in the batter, tap the tray on the counter just a few times. Place the cupcake pan in the oven for 15-20 minutes, or till after a toothpick comes out clean.
- Take the tray out of the oven and keep it aside to cool down completely. After cooling remove it from the cupcake molds.
- For frosting, take a medium-size bowl, whisk vegan yogurt and peanut butter properly. Gradually add chickpea flour until smooth consistency.
- Fill frosting in the piping bag fitted with a star tip and graciously frost the cupcakes. And then sprinkle cinnamon and coconut flakes as a topping. Semi-crushed dog treats can even work for yours.

- 3 cups of whole wheat flour
- 3 cups of rolled oats
- 2 cups of carrot puree
- 2 cups of coconut milk
- 1 cup of peanut butter
- 5 tbsp of cornstarch
Directions
- Preheat the oven to 200°C(390°F).
- Combine whole wheat flour and rolled oats in a mixing bowl. Now, mix the carrot puree in it and make the dry ingredients.
- Prepare a batter with as much water as needed.
- Grease a cake pan and pour the batter into it.
